Chinese restaurants produce impossibly tender stir-fry chicken while home cooks using identical ingredients end up with dry, tough meat. The difference is velveting—a 15-minute marinating step followed by 30-second pre-cook.

This technique compensates for the fundamental limitation of home stoves: they can't generate the intense heat that professional wok burners provide.

Advantages: Less messy. Uses minimal oil. More accessible for home cooks. No temperature monitoring required. Zero splatter risk.

Disadvantages: Not as tender as oil method (about 10% difference). Some proteins wash away in blanching process. Adds excess water that can cause steaming in final stir-fry if not drained thoroughly. Interior texture compared to oil blanching.

Step-by-Step Velveting Process (Water Method)

Step 1: Slice Chicken Properly (5 Minutes)

Use boneless, skinless chicken breast. Slice against the grain into ¼-inch thick strips—roughly 2 inches long by ½ inch wide. Uniform size matters: thicker pieces under-cook while thinner pieces over-cook during the 30-second blanch.
