What is Emulsification? The Science Behind Creamy Sauces

Types of Emulsions

1. Permanent Emulsions

These stay stable for extended periods without separating:

  • Mayonnaise - Strong emulsifier (egg yolk) creates very stable emulsion

What causes an emulsion to break?

Can you fix a broken emulsion?
