**Initial Seasoning Process:**
1. Strip factory coating (if present) with steel wool
2. Wash and dry thoroughly
3. Apply thin layer of high-smoke-point oil (flaxseed, grapeseed, avocado)
4. Bake upside-down at 450-500°F for 1 hour
5. Cool completely
6. Repeat 3-5 times for good initial seasoning
**Time Investment:** 6-8 hours total for proper initial seasoning
**Why More Layers Needed:** Cast iron's rough surface from sand casting has microscopic peaks and valleys. Multiple seasoning layers are needed to fill those valleys and create a relatively smooth cooking surface.
**Development Timeline:** Cast iron requires approximately 50+ cooking sessions to develop truly nonstick properties. Early use may experience occasional sticking.
**Daily Maintenance After Each Use:**
- Clean while still warm with hot water and stiff brush
- Dry completely on stovetop over low heat
- Apply very thin layer of oil while still warm
- Store in dry location
Carbon Steel Seasoning: Smoother Base, Faster Results

4. Heat on stovetop until smoking, wipe excess

**Why Fewer Layers Needed:** Carbon steel's smooth surface from stamping/spinning has fewer imperfections. Seasoning adheres quickly and creates a slick surface faster than cast iron.
**Development Timeline:** After just 10-15 cooking sessions, carbon steel typically develops excellent nonstick properties. The smooth base means seasoning builds faster and more evenly.
